Michigan’s best local fare: West Texas BBQ is out with brisket, turkey, and pork

JACKSON, MI — West Texas BBQ is hitting the streets with a new food truck.

Hunter and Mallory Sullivan took over the BBQ area in April. The restaurant has been open since 1991, with original owner Dan Huntoon passing away in 2020 and longtime friend Butch Colvin taking over before the Sullivans took over ownership.

Since taking over the business, the Sullivans have received constant requests to cater for events such as weddings and graduations. Many of them specifically want West Texas to be served by a food truck because it’s outdoorsy and easy, Hunter said.

“Unfortunately, we didn’t have one,” he says. “It just seemed like an opportunity.”

So the Sullivans added a food truck to help them expand outside of the restaurant’s walls and bring their food to the community, Hunter said.

The food truck has been running for about a month and events it has attended include a Veterans Day event in Adrian, he said.

The food truck will be faster and easier to operate compared to the stationary restaurant. At events, the food truck offers combo meals from what you can typically find in West Texas, Hunter said.

Brisket, pork, turkey and hot wings will be staples, along with about three different sides to choose from, he said.

“You’ll be able to have a sandwich or a platter with a few side dishes and something cold,” Hunter said.

Even with the addition of the food truck, the brick-and-mortar restaurant still brings lines for platters, sandwiches, and combos.

Made in-house and smoked right outside, Texas smoked brisket is definitely a hit at the restaurant, and its award-winning pork shoulder is something customers can’t miss, Hunter said.

When people look at the menu, they spot West Texas turkey, along with chicken wings, Hunter said. On Friday, the prime rib sandwich is something people will travel to eat, he said.

“If you’re a West Texas fan, Friday is the day that a lot of our folks come from far,” he said.

West Texas is also known for its homemade side dishes. Coleslaw, Mexican street corn dip, potato salad and of course mac and cheese are popular.

“It’s not just power in a box,” Hunter said of the macaroni and cheese. “(The staff) put a lot of time, love and effort into it.”

West Texas is located at 2190 Brooklyn Road. Currently, the restaurant is open Thursday and Friday from 11am to 4pm and Saturday from 11am to 6pm, although Hunter said longer hours are a work in progress.
